Global knives are made from the finest Cromova 18 stainless steel, ice tempered and hardened to Rockwell C56-58 degrees which holds a razor sharp edge longer and resists rust, stains and corrosion. To ensure a long lasting cutting edge, the blade of a Global knife contains a high level of carbon. It is necessary therefore to wash and dry immediately after use to avoid damage.
